Carrot and Fig Cakes

Recipe from Dexter’s Delights: Fun and Healthy Treats For Dogs

Ingredients:

  • Dog Treats Your Pet Dog Will Surely Love1 cup chickpea flour (High in protein and fiber and low in calories. Packed with vitamins, good for bone and heart health.)
  • ½ cup carrots
  • ½ cup figs
  • 3 eggs
  • 1 tsp. baking powder
  • ½ tsp. cinnamon (Rich in antioxidants, anti-inflammatory properties, heart-healthy, cancer prevention, improves dental health and digestion.)
  • ½ tsp. clove (Aids in digestion helps fight against cancer, protects the liver and boosts the immune system.)

Instructions:

1. Preheat oven to 300oF.
2. Dice figs.
3. Puree carrots then whisk in eggs, diced figs, baking powder, cinnamon and clove.
4. Place mixture into a large mixing bowl and add flour and mix well.
5. Fill each ceramic coated mini cupcake pan 2/3 full with batter.
6. Bake 15-20 minutes or until toothpick inserted in center comes out clean.
7. Allow to cool in pan for 5 minutes.
8. Run a butter knife around edges of each cup and invert onto baking sheet to remove cupcakes.
